There are so many benefits to eating seasonal fruit and vegetables. This very simple vegetable soup is made using delicious locally grown produce that can be found at your favourite farmers market. This soup recipe can be made using any Seasonal Vegetables. I always revert to Bord Bia’s Best in Season Calendar to guide me when I want to know when to buy in-season fresh produce. For this recipe, I also used my Left-Over Vegetable Stock as one of the key ingredients. I really hope you enjoy my seasonal vegetable soup!
